Ingredients

  • 3 ripe Bartlett pears, peeled, halved, and cored
  • 1 1/2 tablespoons salted butter (room temperature)
  • 1 cup whole milk (room temperature)
  • 3 large eggs (room temperature)
  • 3/8 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/8 teaspoon table salt
  • 1 teaspoon ground cinnamon

Instructions

Preheat oven to 350°F. Butter a ceramic or cast-iron pan. Arrange pear halves in pan, cut side down.

In a medium bowl, beat together the remaining ingredients until thoroughly combined. Pour batter over pears in pan. Bake in preheated oven for 35 minutes or until batter is puffed and lightly browned. Remove from oven and let cool slightly on a rack before serving warm with powdered sugar, whipped cream, crème fraiche, or vanilla ice cream.
