Description
To make our ACRE olive oil gin, we fat wash Fords London Dry Gin with our ACRE olive oil by infusing the two at room temperature for a minimum of 3 hours. We then freeze it until the olive oil solidifies so we can remove it before straining the gin through cheese cloth for our final ACRE olive oil gin.

- 2 ounces Acre olive oil gin
- 1/2 ounce Timbal dry vermouth
- 2 dashes umami bitters
- Lemon peel
- Olives and pickled bird peppers
Instructions
Stir for 30 seconds and strain. Express a lemon peel over the drink and garnish with olives and pickled bird peppers.
