Point Reyes Farmstead Cheese Co is the work of three sisters who, 25 years ago, turned their parents’ legacy West Marin dairy farm into an award-winning cheesemaking workshop. They advanced the farm’s already notable ecological efforts by creating more on-farm jobs and getting better value out of the milk. But the greatest advantage came to cheese lovers with the company’s first cheese, Original Blue, followed by new additions like the Toma with Attitude line. Their TomaRashi, which brings the flavors of spicy shichimi togarashi into their rich, buttery Toma, is the star of this recipe.
Ingredients
- 1 pound shrimp, peeled, deveined, tails removed, chopped
- 2 tablespoons extra virgin olive oil, divided
- 1 teaspoon chile powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 8 (6-inch) corn tortillas
- 2 ounces shredded Point Reyes TomaRashi (about 1/2 cup)
- Pickled red onions
- Avocado or guacamole
- Sliced radishes
- Fresh cilantro
- Sour cream
- Squeeze of fresh lime juice
Instructions
In a medium bowl, whisk together 1 tablespoon olive oil, chile powder, cumin, smoked paprika, garlic powder, salt, and pepper. Add shrimp and toss to coat. Let shrimp marinate for 15 minutes (or refrigerate for up to an hour).
Heat a large nonstick skillet over medium-high heat. Add the shrimp and cook for 1 to 3 minutes per side, or until pink and curled. Remove from heat, transfer shrimp to a plate, and wipe out the skillet with paper towels.
Heat 1 tablespoon olive oil in the same skillet over medium heat. Place tortillas in the pan (whatever comfortably fits flat), sprinkle with cheese, and place a spoonful of shrimp over the cheese. Cook, open-faced, until the cheese is melted and the bottom is golden, about 3 minutes. Fold tortilla in half and transfer to a plate. Repeat with more olive oil and the remaining tortillas, cheese, and shrimp. Top with your favorite toppings and serve immediately.
