On an October morning in the dining room at Berkeley’s Via del Corso, Scott Peterson worked on his settings for a deep chiaroscuro effect as he aimed his camera at the plate of Gorgonzola, walnuts, and cut figs you see on our cover. Meanwhile, Chef Massimo Orlando prepared bagna cauda and Chef Peter Chastain arranged the dipping vegetables for the shot that open our story on bagna cauda. By noon, we were all dipping into the sauce and making the fine mess you see in the photo at right.
