Three Apple Slaw

Our version of this simple dish has proven to be one of our most sought-after salads. It’s a welcome addition to any table and a refreshing foil for rich holiday food. We like using Granny Smith for their crisp, tart notes; Pink Lady to add a complex combination of sweet and tart with an effervescent finish; and Fuji for their caramel flavor to complement the mix. Total cook and prep time is only 20 minutes.
Serves 4
For the dressing
3/4 cup mayonnaise
1 1/2 tablespoons Dijon mustard
1/2 tablespoon lemon juice
1/4 teaspoon Tabasco
1 tablespoon sugar
1 teaspoon salt
Freshly ground black pepper, to taste
For the slaw
1 Granny Smith apple, unpeeled, cut into matchsticks
1 Pink Lady apple, unpeeled, cut into matchsticks
1 Fuji apple, unpeeled, cut into matchsticks
6 celery sticks, very thinly sliced on the diagonal
1 bunch chives, thinly sliced
2 sprigs parsley, leaves only, roughly chopped
In a small bowl, mix all the dressing ingredients together. In a large bowl, combine the apples, celery, chives and parsley, then add the dressing and toss.
