Autumn Kale and Apple Salad

Description
Combine apples, cranberries, and kale and you get a delicious and healthy fall salad that’s perfect for lunch or as a side for dinner. Because kale is so hearty, this salad is perfect to make ahead of time or take to work the next day.
Ingredients
- 1 bunch of curly kale, cleaned, stems removed and chopped
- 1 tablespoon extra virgin olive oil
- Pinch salt
- 2 tablespoon extra virgin olive oil 2 tablespoons apple cider vinegar 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- 1/8 teaspoon each salt and pepper
- 1 large red apple, cored and diced
- 1/4 cup dried cranberries
- 1/2 cup pecans or walnuts, chopped
- 1/4 cup feta cheese
Instructions
Place chopped kale in a large bowl. Drizzle with1 teaspoon extra virgin olive oil and a pinch of salt. Massage with your hands for 1-2 minutes until the kale is soft and slightly darker.
Combine vinaigrette ingredients by shaking in a mason jar with a lid or whisking in small bowl. Set aside.
Add diced apples, cranberries, and pecans or walnuts to the kale. Drizzle vinaigrette over the salad and toss to combine. Sprinkle feta cheese over the top before serving.
