Easy Chocolate Truffles

Ingredients
- 12 ounces semi-sweet chocolate chips
- 3/4 cup heavy whipping cream
- 1 teaspoon vanilla
- Coatings: chopped toasted nuts, shredded coconut, and red sprinkles
Instructions
If you have a double boiler, fill the bottom pot with 2 inches of water and bring it to a boil. Reduce heat to a simmer. If you don’t have a double boiler, you can simply place a bowl over a pot with 2 inches of simmering water. Just make sure the bowl doesn’t touch the water. Add the chocolate chips and heavy cream. Stir frequently until the chocolate is melted and ganache is smooth and glossy.
Remove pot from the heat and stir in the vanilla. Pour the ganache into a loaf pan or small baking dish and chill for at least an hour or until firm.
Line a tray with wax paper or parchment paper. Scoop 1-2 teaspoons of ganache onto your palm and roll between your hands to create a ball. (You may want to use latex gloves to roll the ganache.) Place on the paper-lined tray and repeat until you have used all the ganache. Return to the fridge for ½ hour to firm up.
Roll truffles in desired coatings. Keep refrigerated until you’re ready to serve.
