The Loss of Food Diversity

Jonathan Foley is executive director of the California Academy of Sciences and Simran Sethi is the author of Bread, Wine, Chocolate: The Slow Loss of Foods We Love. Sethi says that American foods consist primarily of just corn, wheat, rice, palm oil, and soybeans. She traveled to six continents to find endangered tastes and ways to save popular foods. Foley, an expert on the health benefits of a diversified food system and the dangers of industrial monoculture, has developed specific ideas for feeding billions.
