Other option: Madeira! (This is what our forefathers drank when toasting the Declaration of Independence.) The Rare Wine. Co. makes a delicious spread of high-end Madeiras, although we don’t currently have them in stock. $50-$70.

Pre-feast quaffer: Something light and fresh, not too serious.
