Sweet Potato, Onion, and Gorgonzola Tart

1 recipe Quick Whole-Wheat Puff Pastry
2 onions, sliced thinly
1 tablespoon olive oil
1 tablespoon brown sugar
1 teaspoon cider vinegar
2 whole organic sweet potatoes, baked
4 ounces gorgonzola, or other yummy blue cheese
1 teaspoon sea salt
Poppy seeds, sesame seeds, optional
Roll out puff pastry to a 10-inch circle and refrigerate while you make the filling.
Sauté onions in olive oil over very low heat, stirring occasionally, until translucent and soft. Add brown sugar and cook to melt and caramelize the onions. Add vinegar and combine. Remove from heat and cool completely.
Peel baked sweet potatoes and slice thickly.
Layer onion mixture and sweet potatoes on the middle of the pastry, leaving at a least 2 inches of border. Sprinkle with cheese.
Fold the pastry up around the filling, crimping the edges. Refrigerate ½ hour, while preheating the oven to 375º.
Brush the outside of the pastry with milk, sprinkle with the sea salt and seeds, and bake for approximately 30 to 35 minutes. Watch the filling, and if it looks dry, cover with foil for the remainder of baking.
