Poached Green Almonds with Green Garlic

Ingredients

Units Scale
  • 1 pound green almonds
  • 1/2 cup extra virgin olive oil
  • 1/2 tablespoon organic cane sugar
  • 1 stalk green garlic, minced
  • 2 navel oranges, juiced
  • Kosher salt, to taste
  • Chive blossoms to taste

Instructions

In a saucepan, combine the green almonds with the olive oil, green garlic, orange juice, sugar, and salt and bring to a simmer over medium-high heat. Reduce heat to low and cook until green almonds are tender, about 30 minutes. Allow it to cool and refrigerate for at least 2 hours.

Transfer the green almonds and their cooking liquid to a serving dish and garnish with the chive blooms.
