Poached Green Almonds with Green Garlic

If you have the good fortune of knowing an almond farmer—like Brentwood, California’s esteemed organic fruit grower, Frog Hollow Farm—you might find that the farm harvests some of their almonds when they are still in an immature stage in early spring. Units Scale
  • 1 pound green almonds
  • 1/2 cup extra virgin olive oil
  • 1/2 tablespoon organic cane sugar
  • 1 stalk green garlic, minced
  • 2 navel oranges, juiced
  • Kosher salt, to taste
  • Chive blossoms to taste


In a saucepan, combine the green almonds with the olive oil, green garlic, orange juice, sugar, and salt and bring to a simmer over medium-high heat. Reduce heat to low and cook until green almonds are tender, about 30 minutes. Allow it to cool and refrigerate for at least 2 hours.

Transfer the green almonds and their cooking liquid to a serving dish and garnish with the chive blooms.
