Celebration Salsa

Description

Nectarines, sweet corn, and blueberries make the perfect salsa for any midsummer celebration. Serve with tortilla chips or over grilled halibut or pork tenderloin.


Ingredients

Units Scale
  • 2 nectarines, pitted and diced
  • 1 cup fresh corn kernels (cut from 2 ears)
  • 1 cup fresh blueberries
  • 1 small red onion, finely diced
  • 1/3 cup chopped cilantro or basil
  • 1 jalapeño, seeded and diced
  • 1 clove garlic, minced fine
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste

Instructions

Mix all ingredients in a serving bowl and allow the flavors to mingle for about 1 hour. Refrigerate until ready to serve.
