Peach and Prosciutto Flatbread Pizza

Description

Peaches aren’t just for desserts and snacking. They add a sweet and juicy contrast to savory dishes like a flatbread pizza. This is an ideal recipe for a light summer meal.


Ingredients

Units Scale
  • 1 store-bought flatbread
  • 1 1/2 cups whole-milk ricotta cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2-3 ounces prosciutto, sliced into 1-inch pieces
  • 2 medium peaches, pitted and cut into 1/4-inch slices
  • 1/3 cup pickled red onions (recipe below)
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh basil, torn
Pickled Onions
  • 1/2 cup champagne or rice vinegar
  • 1 tablespoon sugar
  • 1 cup thinly sliced red onions

Instructions

To make the pickled onions: Combine vinegar and sugar in a saucepan over medium high heat. Cook until the sugar is dissolved. This will take 1 minute. Turn the heat off and add the red onions. Set aside for 1 hour. Note: Any extra pickled onions can be stored in a sealed container in the fridge.

To make the pizza: Preheat the oven to 475°F. Place the flatbread onto a baking sheet lined with parchment paper or foil. Spread ricotta cheese on flatbread leaving a ½ inch border. Season with salt and pepper. Top with slices of prosciutto, peaches, and pickled onions. Drizzle with oil. Bake for 15 minutes. Top with basil and serve.
